This unique strain, isolated from maple water by our friends at Le Labo Yeast & Brewing Solutions, ferments only glucose and fructose—making it a great fit for non-alcoholic IPAs and sour beers. Expect bright tropical fruit and pear notes with a touch of vanilla.

For low-alcohol production, start with a low-gravity wort and keep simple sugars to a minimum. To protect against unwanted microbes, pitch into pre-acidified wort (pH < 4.2). Plan for roughly five days of primary fermentation for stability.
