DistilaMax™ CN is a natural strain of Saccharomyces cerevisiae, supplied in a 10 kg box, recommended for the production of aromatic and complex rums, including rhum agricole, from fresh sugar cane juice or cane molasses. This very robust strain features a short lag phase, performs consistently within 25°C–40°C, tolerates osmotic stress, and operates effectively under challenging conditions, including a pH range of 3.4–5.3, producing a complex and well-balanced aromatic profile rich in key esters and phenyl-2 ethanol.
