DistilaMax™ CN is a natural strain of Saccharomyces cerevisiae isolated by the Universidade Federal de Minas Gerais (Brazil), recommended for the production of aromatic and complex rums, including rhum agricole, from fresh sugar cane juice or cane molasses. This very robust strain features a short lag phase, performs consistently within 25°C–40°C, tolerates osmotic stress, and operates effectively under challenging conditions, including a pH range of 3.4–5.3, producing a complex and well-balanced aromatic profile rich in key esters and phenyl-2 ethanol.
